Ramadan Recipes at The Globe Have a Personal Touch

As Samira May Badawi recited a list of classic Middle Eastern dishes, Naif Shraim nodded in recognition—that is, until Badawi mentioned kabsa, a chicken and rice concoction that caused Shraim to broadly smile.

“My favorite,” he said of what is considered the national dish of his native Saudi Arabia.

Chances are, there will be plenty of kabsa—and sambusic and makloubeh—to go around during the next month. That’s when The Globe, the dining hall at George Mason University’s Global Center, prepares for the celebration of Ramadan, the ninth month in the Islamic calendar.
